Monoculture vs Multiculture

I've been a big fan of the Tropico series with 6 being my favorite. With that being said I've been reading a lot of post here and other places and see a lot of advocating for Plantation modes to be at Multiculture. I understand the boost to nearby Plantations for different crops. However I've very rarely played a game using Multiculture. Not that I haven't tried.
Reasons why:
Usually in colonial times I'm trying to generate as much income at minimum cost. So Mainly sugar plantations for Rum. With the occasional Coffee plantation if its market value is high. I do however understand the value in creating plantations to support future era industries. If workforce and finance permitting I may do this.
Fertility, There is a lot of instances in which I don't see the ability to add multiple plantations of different resources close to each other just for the simple reality that the area wont support it. I'll only create a plantation if the fertility allows 80% at minimal. Usually I'm looking for the upper 90 percentile range. So in general I rarely see an opportunity to add multiple different plantations with good fertility levels in proximity to each other.
Manure spreading, Usually I'll keep a manure spreader for every two Plantations while staying in Mono. This encourages me to keep creating farms which helps with food for my population as well as supports industries. This also buys me time before I'm ready to build grocery stores.
So I just wanted to get some feedback on why Multiculture is more of the preference then Mono as I feel as I must be missing something.
