Question about professions

I'm curious about leveling my professions up from novice to apprentice and journeyman and so forth when I read the wiki I got the impression that I could have X professions at certain levels but it seems that when I level say my herbalism to Journeyman in my head it should create a spot in apprentice but that doesn't seem to be the case.
